My research work focuses on the application of innovative technologies of ultrasound and microwave in different areas of food technology which include extraction of bioactive compounds from food wastes, eco-processing of food products and modification of food components to improve their functionality. Currently, my work is emphasized on the modification of plant proteins using ultrasound technology to develop functional alternatives to animal proteins as a sustainable approach. Most of these works are in collaboration with researchers from Australia, France, England, USA, and have been published in more than 70 peer-reviewed articles and book chapters.
